The Green Papaya Salad is a popular Southeast Asian dish with refreshing, healthy, cooling, and absolutely delicious.

Found in Laos, Cambodia, Thailand, and Vietnam, each version has its own different twists. In Vietnam, this dish is called Gỏi Đu Đủ, and you can whip it up in 10 minutes or less.

This salad calls for green papaya – an unripe version of the orange papaya you regularly see in groceries. Compared to its ripe version, the green papaya has a neutral taste, much like a cucumber.

When you marinate it in the salad dressing, it picks up the flavors from the dressing and becomes slightly sweet and crispy.

Tips: When buying green papaya, look for one that is firm with vibrant green color and smooth skin. If it is pale green or has some yellowish hues on its skin, it’s on its way to being ripe and would not work well for the salad.

Once we get the perfect papaya, we can use a mandolin or a peeler to get very thin papaya strips. You can also thinly slice this into matchsticks using a knife.

What makes this dish interesting is the combination of herbs:

  • Thai basil for a hint of sweetness,
  • Some coriander leaves that add freshness,
  • And mint leaves that give a cooling,
  • Refreshing taste with each bite.

We added some shrimps and peanuts for different textures of protein. Other popular versions of this dish require thin slices of beef jerky.

Vietnamese beef jerky can be bought in Asian groceries, but if this isn’t available, regular beef jerky will do, but you will need to slice these very thinly.

Shred the green papaya lengthwise against the mandolin to get long thin strips. Set aside.

In a bowl, combine all the ingredients, making sure that the sugar is completely dissolved. Set aside.

Add the green papaya, carrots, all herbs, shrimps, fried shallots, and beef jerky (if it will be used for the dish) in a bowl and toss well.

Pour the salad dressing onto the vegetables and mix. Let it sit for at least 5 minutes.

Transfer to a plate and top with roasted peanuts and some more sliced chili.

Ingredients

  • 300 grams green papaya peeled and shredded or sliced into long strips
  • 100 grams of carrots peeled and shredded or sliced into long strips
  • 4-7 pieces of shrimp peeled and steamed or boiled.
  • 1 1/2 cups of a combination of mint leaves Thai basil leaves, and coriander leaves.
  • ¼ cup of roasted peanuts
  • 2 tbsp fried shallots
  • 100 grams thinly sliced beef jerky optional

Salad Dressing

  • 2 tbsp lime juice
  • 2 tbsp rice vinegar
  • 2 tbsp 2 tbsp sugar
  • 1/4 cup of water
  • 1 bird’s eye chili, finely chopped
  • 2 cloves of garlic, finely chopped

Instructions
